Know Your Noodles
There are so many kinds of noodles. Each one has its own texture and taste. To make a great dish, you need to pick the right noodle.
Asian Noodles: So Much to Choose From
Asian food has tons of different noodles. Each one is special.
- Ramen Noodles: Thin and made from wheat. Usually in a soup with meat, veggies, and a soft egg. Very popular in Japan.
- Udon Noodles: Thick and chewy. Great in Japanese soups and stir-fries.
- Soba Noodles: Thin and made from buckwheat. You can eat them hot or cold. Often with a dipping sauce or in soup.
- Rice Noodles: Made from rice flour. They come in all shapes and sizes. A big part of Southeast Asian food.
- Glass Noodles: See-through! Made from starch. Slippery texture. Good in stir-fries and soups.
- Egg Noodles: These have egg in them. Makes them richer and chewier. Common in Chinese cooking.
Italian Pasta: The Classics
Pasta is another popular type of noodle. So many shapes and sizes. There's one for every sauce.
- Spaghetti: Long and thin. The go-to for tomato sauce and meat sauce.
- Penne: Tube-shaped with ridges. The ridges help hold the sauce.
- Fettuccine: Flat and wide. Best with creamy sauces like Alfredo.
- Linguine: Like fettuccine, but a little thinner.
- Farfalle: Bow-tie shaped! Cute, right?
- Macaroni: Short and curved. You know... for mac and cheese!
Cooking Noodles Like a Pro
Cooking noodles right is key. You want the perfect texture and flavor. Here's how:
- Lots of Water: Use plenty of water. This keeps the noodles from sticking. About 6 quarts per pound of noodles.
- Salt the Water: Salt flavors the noodles from the inside. Use 1-2 tablespoons per gallon of water.
- Al Dente: Cook them until they're al dente. That means "to the tooth" in Italian. Firm, but not mushy.
- Drain and Rinse? Drain them right away. For pasta, don't usually rinse. The starch helps the sauce stick. But for cold salads or stir-fries, rinse them in cold water. This stops them from cooking and keeps them from sticking.
- Don't Overcook! Mushy noodles are no good. Watch them closely and test them often.
