How to Make Sushi: The Basics

1. Maki Sushi (Rolled Sushi)

This is the most common type. You roll rice and fillings inside nori.

Let's Roll:

  1. Put a sheet of nori on the bamboo mat.
  2. Spread a thin layer of rice on the nori. Leave a little space at the top.
  3. Put your fillings in a line across the middle of the rice.
  4. Use the mat to lift the edge closest to you and roll it over the fillings. Tuck it in tight.
  5. Keep rolling until it's all rolled up.
  6. Squeeze the roll with the mat to shape it.
  7. Take off the mat and cut the roll into 6-8 pieces with a sharp, wet knife. Wipe the knife after each cut.

2. Nigiri Sushi (Hand-Pressed Sushi)

This is rice with a slice of fish on top.

Make a Mound:

  1. Wet your hands so the rice doesn't stick.
  2. Take a little rice and shape it into a small mound.
  3. Put a slice of fish on top.
  4. You can use a small piece of nori to hold the fish on, if you want.

3. Temaki Sushi (Hand-Rolled Sushi)

This is a cone-shaped hand roll.

Cone it Up:

  1. Hold a sheet of nori in your hand.
  2. Put a little rice in one corner.
  3. Add your fillings.
  4. Roll the nori into a cone shape.
  5. Eat it right away!

4. Uramaki Sushi (Inside-Out Roll)

This is like maki, but the rice is on the outside.

Rice on the Outside:

  1. Put nori on the mat.
  2. Spread rice all over the nori.
  3. Flip it over so the rice is facing down on the mat.
  4. Put your fillings in the middle of the nori.
  5. Roll it up like maki sushi.
