  3. Make the Syrup: Put the sugar, corn syrup, water, and salt in a saucepan. Heat it over medium heat. Stir until the sugar is gone. Then, stop stirring and put the candy thermometer in.
  4. Cook to 240°F: Keep cooking the syrup (don't stir!) until the thermometer says 240°F (115°C). This is called the "soft ball stage." This is key for the right marshmallow texture. Be patient!
  5. Pour Syrup into Gelatin: Carefully pour the hot syrup into the bowl with the gelatin. The syrup is very hot, so be careful!
