Cover the jar with your cloth and secure it with a rubber band. Keep it in a dark, room-temperature spot (68-78°F is ideal). Away from direct sunlight!
After 7 days, try your kombucha. Use a straw to take a sip. Careful not to mess with the SCOBY. It should taste a little sweet and a little sour. Keep fermenting until it tastes how you like it.
Before you bottle, save 1 cup of kombucha for your next batch. You can also store the SCOBY in a clean container with some starter tea.
Pour the kombucha into your bottles, leaving some space. Add your favorite flavors, like fruit or spices. Seal the bottles tight. Let them sit at room temperature for 1-3 days to get fizzy. Burp the bottles daily to release pressure. Otherwise... BOOM!
