I'll show you how, step-by-step. From the basics to adding flavors, you'll be a kombucha pro in no time. So, let's get brewing!
What's Kombucha Anyway?
Kombucha is tea that's been fermented. What does that mean? You add a SCOBY to sweetened tea. A SCOBY is a bunch of good bacteria and yeast that work together. They eat the sugar and turn the tea into something fizzy and a little sour. The best part? This makes good stuff like probiotics and antioxidants.

- A thermometer. To make sure it's not too hot when you add the SCOBY.
- pH strips (maybe). Some people like to check how acidic the kombucha is.
Ingredients:
- A SCOBY. This is the most important thing. Get one from a friend or buy it online.
- Starter tea. A little kombucha from a previous batch. It helps get things going.
- Tea. Black or green tea works best. Skip the flavored teas.
- Sugar. Plain white sugar is fine. The SCOBY eats most of it!
- Filtered water. Tap water can hurt the SCOBY.
Let's Brew! Step-by-Step
Ready? Here's how to make kombucha:
Step 1: Brew the Tea
- Boil a gallon of water.
- Take it off the heat. Add a tablespoon of tea or 4-6 tea bags. Let it sit for 10-15 minutes.
- Take out the tea bags or leaves.
Step 2: Add the Sugar
- Pour in 1 cup of sugar. Stir until it's all dissolved.
Step 3: Cool it Down!
- Let the tea cool completely. Hot tea will kill your SCOBY! You can put the pot in a bowl of ice to make it cool faster.
Step 4: Get it in the Jar
- Pour the cooled tea into your clean glass jar.
- Add 1-2 cups of starter tea.
Step 5: SCOBY Time!
- Gently put the SCOBY in the jar. It might sink or float. That's okay!
Step 6: Cover and Wait
- Cover the jar with your cloth and rubber band.
- Put it somewhere dark and not too hot or cold (68-78°F is good).
- Wait for 7-30 days. It depends on how warm it is and how strong your SCOBY is.
Step 7: Taste Test!
- After a week, try it. Use a clean straw to take a little sip.
- It should taste a little sour and a little sweet. Too sweet? Wait longer. Too sour? It's done!
- Ready to move on?
Step 8: Flavor Time! (Second Fermentation)
- Take out the SCOBY and 1-2 cups of kombucha. Put them in a clean jar for your next batch.
- Pour the rest of the kombucha into bottles. Leave some room at the top.
- Add your flavors! (More on that in a minute).
- Seal the bottles tight.
- Let them sit at room temperature for 1-3 days to get fizzy.
- Important: Open the bottles a little each day to let out the pressure. Otherwise, they could explode!
- Once they're fizzy enough, put them in the fridge.
Step 9: Drink Up!
- Enjoy your homemade kombucha!

This is where the fun begins! Here are some things you can add:
- Fruits: Berries, lemon, lime, apples, peaches, mangoes…
- Herbs: Mint, ginger, lavender, rosemary…
- Spices: Cinnamon, cardamom, cloves…
- Juices: Apple, grape, pomegranate…
- Purees: Pumpkin, ginger…
- Even vegetables! Cucumber, celery…

Uh Oh! Problems?
Sometimes things go wrong. Here's how to fix them:
- Mold. This is bad. Toss everything and start over with a new SCOBY. Look for fuzzy, green, blue, or black stuff.
- Fruit flies. Keep your cloth cover tight! You can also use a fruit fly trap.
- It's taking too long. Move your kombucha to a warmer spot.
- Too sour! Make the next batch shorter.
- Weak SCOBY. Make sure you're using good tea and sugar. And the right temperature!
- Stuff at the bottom. That's normal. Just strain it out if you want.
Taking Care of Your SCOBY
Your SCOBY is alive, so treat it well!
- Keep it wet. Always keep it in starter tea or kombucha.
- No chemicals! Soap is a big no-no.
- SCOBY hotel. If you're not brewing, keep it in a jar with kombucha. Change the kombucha every few weeks.
- Layers. Your SCOBY will grow new layers. That's a good sign! You can peel off the old, dark ones.
Is Kombucha Healthy?
People think kombucha is good for you. But we need more research to be sure. Here's what people say:
