Homemade Refried Beans: Easy as Pie!
Hey there! Love refried beans? Me too! Canned beans are okay, but nothing beats homemade. This recipe is super easy, I promise.
Picking the Perfect Beans
Pinto beans are classic – creamy and mild. But you can use black beans, kidney beans, or even a mix! Just grab some dried beans that look plump and healthy. Avoid any that are shriveled or weird-looking.
Getting the Beans Ready: Soaking and Cooking
Soaking is key. It makes the beans cook faster and taste better. Soak 'em overnight in cold water. Then, rinse them well.
Next, boil the beans in fresh water until they're super soft. About 1-1.5 hours usually. You'll know they're done when you can easily mash one.
The Magic of Refrying
This is where the fun starts! Drain the beans, but save about a cup of that yummy cooking liquid. Heat some lard or oil in a skillet. Lard tastes amazing, but oil works fine too.
Mash those beans! Use a potato masher, fork, whatever you have. I like to leave some whole for texture. Add a little of that saved liquid, stirring constantly, until you get the right consistency. Cook for 10-15 minutes. That's it!
Seasoning is Everything
Salt is a must! But don't stop there. Here's what I usually add:
- Salt: To taste!
- Garlic: A couple of cloves, minced.
- Onion: Finely chopped, adds sweetness.
- Cumin: A teaspoon or two – warms things up.
- Chili Powder: For a little heat. Start small!
- Oregano: A dash adds a nice fresh scent.
Fun Variations!
Once you've mastered the basics, get creative!
- Spicy: Add a jalapeño or two!
- Cheesy: Stir in some Monterey Jack or cheddar at the end.
- Bacon-y: Crumble some cooked bacon in there. Yum!
- Chorizo: Cooked chorizo adds a fantastic flavor boost.
Serving and Storing
Serve 'em hot! They're great as a side, in burritos and tacos, or with chips. Leftovers last for 3-4 days in the fridge.
Troubleshooting
Problem: Too watery?
Solution: Cook uncovered longer to evaporate some liquid.
Problem: Too thick?
Solution: Add more of that saved liquid.
Problem: Too bland?
Solution: Add more seasoning!
