Choosing Your Tofu: Firm or Extra-Firm is Key

The best tofu for curry is firm or extra-firm. Why? Because it holds its shape better. Nobody wants mushy tofu! Before you use it, you have to press it. This gets rid of extra water, making it crispier and tastier. Wrap it in a towel, put something heavy on top for 30 minutes, or use a tofu press. Simple!

Making the Curry Paste: The Secret Weapon

The curry paste is everything. You can buy it, but making your own is way more fun. Plus, you control the flavors!

  • Ingredients: 4-6 garlic cloves, 2-3 inches ginger (peeled, chopped), 1-2 red chilies (add more if you like it spicy!), 1 small chopped onion, 1 tbsp coriander seeds, 1 tbsp cumin seeds, 1 tsp turmeric, ½ tsp cinnamon, ½ tsp cloves, ½ tsp black peppercorns, 2 tbsp oil.
