- Healthy Stuff: No yucky stuff! No bad sugars or things you can't pronounce.
- Make it Yours: Change it up! Try different flours, seeds, or spices.

- Feel Good: You made bread! From scratch! That's awesome.
What You Need: The Ingredients
Know what each thing does. Then you are on your way to successful baking bread!
- Flour: This is it! What bread is made of. Bread flour is best. It has more protein. Makes the bread strong. All-purpose flour works too. But the bread might not be as chewy.
- Water: Gets the flour wet. Helps the gluten work. Warm water is good. About 105-115°F (40-46°C). It wakes up the yeast.
- Yeast: Makes the bread rise. Dry yeast, instant yeast, fresh yeast... they all work. But you need to use them a little differently.
- Salt: Don't forget this! It controls the yeast. It also makes the bread taste good.
- Sugar (Maybe): Gives the yeast food. Makes the bread a little sweet. Helps it brown. Honey or maple syrup works too.
- Fat (Maybe): Makes the bread soft and yummy. Butter, olive oil, or shortening are good choices.
Let's Bake! Easy Bread Recipe
Let's start easy. A simple white bread is the best for learning.
What You Need:
- 3 cups (360g) bread flour
- 1 ½ cups (360ml) lukewarm water
- 1 teaspoon (5g) active dry yeast
- 1 ½ teaspoons (9g) salt
- 1 tablespoon (15ml) honey (maybe)
- 2 tablespoons (30ml) olive oil (maybe)
What To Do:
- Wake Up the Yeast: Put the warm water and yeast in a bowl. Wait 5-10 minutes. It should get foamy.
- Mix It All: Put the flour and salt in a big bowl. Mix. Add the yeast water, honey (if you use it), and oil (if you use it).
- Get It Together: Stir until it's all mixed. It will be shaggy.
- Knead It: Put the dough on a floured surface. Knead for 8-10 minutes. It should be smooth and stretchy. Or use a mixer for 5-7 minutes.
- First Rest: Put the dough in an oiled bowl. Turn it so it's all coated. Cover it. Let it sit in a warm place for 1-1.5 hours. It should get bigger.
- Make a Shape: Punch the dough down. Get the air out. Make it into a loaf.
- Second Rest: Put it in a greased pan. Cover it. Let it sit for 30-60 minutes. It should almost double.
- Bake Time: Heat the oven to 375°F (190°C). Bake for 30-35 minutes. It should be golden brown. And the inside should be 200-210°F (93-99°C).
- Cool Down: Let it cool in the pan for 10 minutes. Then put it on a rack to cool all the way.
Baking Tips: Make it Great!
Want you bread to be awesome? Here are some things to know:
- Use a Scale: Measuring is hard. Weighing is better. Especially for flour.
- Check the Yeast: Make sure the yeast is alive! If it doesn't foam, it's dead.
- Knead It Good: Kneading makes the bread strong. Don't skip this!
- Warm or Cold?: Warm makes it rise fast. Cold makes it rise slow.
- Don't Wait Too Long: If it rises too much, it will fall. Press it. If the mark stays, it's ready.
- Hot Oven!: Make sure the oven is hot before you bake.
- Check Inside: Use a thermometer to check the inside.
- Let it Cool: Wait! Don't cut it hot. Let it cool.
Uh Oh! Problems?
Even good bakers mess up. Here's how to fix things:
- Heavy Bread: Not enough kneading? Too much flour? Not enough yeast?
- Flat Bread: Too much rising? Old yeast? Not enough kneading?
- Cracked Top: Too hot? Not enough water in the oven? Put a pan of water in the oven.
- Gummy Inside: Not baked enough? Cut it too soon?
Sourdough Time!
Sourdough bread. It's made with a "starter." That's flour and water that sits and gets wild yeast. It takes longer. But it tastes amazing!
Making the Starter
The starter is the key. Here's how to make one:
- Day 1: Mix 1/2 cup (60g) whole wheat flour and 1/4 cup (60ml) water in a jar. Cover it. Let it sit.
- Day 2-7: Throw half away (use it for pancakes!). Add 1/2 cup (60g) all-purpose flour and 1/4 cup (60ml) water. Mix. Cover it. Let it sit.
- Keep Feeding: Do this every day for a week. You should see bubbles. It will rise and fall.
