What You Need: The Ingredients

  • 1 ½ cups (360ml) lukewarm water
  • 1 teaspoon (5g) active dry yeast
  • 1 ½ teaspoons (9g) salt
  • 1 tablespoon (15ml) honey (maybe)
  • 2 tablespoons (30ml) olive oil (maybe)

  1. Wake Up the Yeast: Put the warm water and yeast in a bowl. Wait 5-10 minutes. It should get foamy.
  2. Mix It All: Put the flour and salt in a big bowl. Mix. Add the yeast water, honey (if you use it), and oil (if you use it).
  3. Get It Together: Stir until it's all mixed. It will be shaggy.
  4. Knead It: Put the dough on a floured surface. Knead for 8-10 minutes. It should be smooth and stretchy. Or use a mixer for 5-7 minutes.
  5. First Rest: Put the dough in an oiled bowl. Turn it so it's all coated. Cover it. Let it sit in a warm place for 1-1.5 hours. It should get bigger.
  6. Make a Shape: Punch the dough down. Get the air out. Make it into a loaf.
  7. Second Rest: Put it in a greased pan. Cover it. Let it sit for 30-60 minutes. It should almost double.
  8. Bake Time: Heat the oven to 375°F (190°C). Bake for 30-35 minutes. It should be golden brown. And the inside should be 200-210°F (93-99°C).
  9. Cool Down: Let it cool in the pan for 10 minutes. Then put it on a rack to cool all the way.

  • Use a Scale: Measuring is hard. Weighing is better. Especially for flour.
  • Check the Yeast: Make sure the yeast is alive! If it doesn't foam, it's dead.

  3. Keep Feeding: Do this every day for a week. You should see bubbles. It will rise and fall.
  4. Ready to Go: When it doubles in size in 4-8 hours, it's ready!

Sourdough Recipe

What You Need:

  • 100g active sourdough starter
  • 350g warm water
  • 500g bread flour
  • 10g salt

What To Do:

  1. Soak the Flour: Mix flour and water. Let it sit for 30-60 minutes.
  2. Mix It In: Add starter and salt. Mix until shaggy.
  3. Let It Rest: Let it sit for 30 minutes. Then stretch and fold it every 30-60 minutes for 2-3 hours.
  4. Make a Shape: Gently shape it into a round or oblong.
  5. Chill Out: Put it in a floured basket. Cover it. Put it in the fridge overnight (12-18 hours).
  6. Bake It Hot: Heat the oven to 450°F (232°C) with a Dutch oven inside. Put the dough in the hot Dutch oven. Cut the top with a knife. Cover it. Bake for 20 minutes. Take the lid off. Bake for 25-30 more minutes. Until golden.
  7. Cool Down: Let it cool on a rack before you cut it.
